AWWWWWWWWWWWWWWW. If they go extinct I will die… seriously… SAVE THE TIGERS GUYS!!
I'm Amanda!
I live in Hong Kong.
I'm currently attending college in California.
I have no idea what I'm doing on this blog. Enjoy!
Snickerdoodle Cupcakes
I love when cookies turn into cupcakes. It’s like a whole new way to eat my favourite treats :)
Recipe here.
Chocolate Chip Cookie Dough Cupcakes
Just look at the anatomy of this thing. It’s making me swoon.
Recipe here.
Cauldron Cakes! (without the handles cuz I’m freaking lazy)
Yaaaaaaaaaay I finally made a recipe. This was so much work actually. Because I made the cupcakes yesterday but I still had to make everything else like the chocolate bases and the tops and the marshmallow stuff and omg they don’t sell marshmallow fluff in HK so I had to make it from scratch. It’s pretty damn tasty though.
This took like all day but I’m so happy I did it because they look really awesome. Okay well some turned out kind of freaking ugly and I’m also a horrible photographer so they look kind of blurry but TRUST ME THEY’RE GOOD.
Can’t wait for tomorrow! Even though I still have Spanish… Which I haven’t really studied for… at all…
Cupcakes that I made for Fran’s birthday!! Also Amy’s but I won’t see her tomorrow :/ Also for the last day of exams!! I will make going to the Spanish/French/Comp Sci exams worthwhile :P
They look ugly right now but wait until they’re decorated and you will be amazed. For now they must sit in the refrigerator until they’ve become a bit more solid and perfect for dipping.
Also even if they weren’t decorated. They’re still freaking delicious (not to toot my own horn or anything but damn)
Harry Potter Treats
Yer a wizard Amanda. The four words that were never once said to me *sadness*. However, we can make up for that! Imagine my immense joy at having found recipes straight from Hogwarts, Hogsmeade and Honeydukes. I might have squealed a bit. From Acid Pops to Chocolate Frogs to Licorice Wands to Cockroach Clusters to Butterbeer and BUTTERBEER CUPCAKES. Wut. And as an added bonus some Caldron Cakes if you ever feel like taking a Potions class. It’s okay to cry; I know how you feel. I’m dying to make these too. You can thank me later.
Recipe for sweets here. And for Butterbeer, Butterbeer Cupcakes, and Cauldron Cakes.

So I’m in my second week of Uni, and it’s not too busy yet. Because of that, I decided to whip up a simple batch of mini cupcakes, and since I had a bar of Twix in the fridge, I decided to put some on top of my cupcakes. One thing I love about chocolate bars and chocolate cupcakes is that they go great together. There’s no such thing as too much chocolate :) Well, not in my vocabulary anyway.
Mini Chocolate Twix Cupcakes
Ingredients
- 55g butter, softened
- 55g caster sugar
- 1 large egg, lightly beaten
- 55g self-raising flour
- 2 tbsp cocoa powder
- 1 tbsp milk
- 1 Twix bar, chopped roughly
Chocolate Ganache
- 100g plain chocolate
- 100ml double cream
Method
- Preheat the oven to 190 degrees Celsius. Put 20 double-layer mini paper cases on 2 baking trays.
- Put the butter and sugar in a bowl and beat together until light and fluffly. Gradually beat in the egg. Sift in the flour and cocoa powder and then, using a metal spoon, fold them into the mixture. Stir in the milk.
- Fill a piping bag, fitted with a large plan nozzle, with the mixture and pipe it into the paper cases, filling each on until half full.
- Bake the cakes in the preheated oven for 10-15 minutes, or until well risen and firm to the touch. Transfer to a wire rack to cool.
- To make the icing, break the chocolate into a saucepan and add the cream. Heat gently, stirring all the time, until the chocolate has melted. Pour into a large heatproof bowl and, using an electric hand whisk, beat the mixture for 10 minutes, or until thick, glossy and cool.
- Fill a piping bag, fitted with a large star nozzle, with the icing and pipe a swirl on top of each cupcake. Alternatively, spoon the icing over the top of each cupcake. Chill in the refrigerator for 1 hour before serving. Serve decorated with chopped twix, if desired.
ENJOY! :D
